One last share for a day filled with Cupid!
Instead of getting my girls a box of chocolates, I made their favorite thing, Cake Pops!
My sticks are a little messy, I was in a hurry trying to get them done before the girls got home from school.
I used the Crazy Cake recipe for the pops for my youngest with an egg allergy.
For my oldest, I filled the middle with a cream cheese
chocolate chip (black bottom) filling.
Below are the recipes for the cake mix and cream cheese chocolate chip filling.
I’m adding the regular Crazy Cake recipe to this post, in case you want to make
the cake in the future. For the Cake Pops, just mix
the Crazy Cake ingredients in one large bowl.
*I used my Babycakes Cake Pop Maker.
Crazy Cake Recipe:
Ingredients
1 1/2 C Flour
1 C Sugar
3 tbsp cocoa
1 tsp baking soda
1 tsp white vinegar
1 tsp vanilla
5 TBL veg Oil
1 c cold water
1 C Sugar
3 tbsp cocoa
1 tsp baking soda
1 tsp white vinegar
1 tsp vanilla
5 TBL veg Oil
1 c cold water
Directions
Mix flour, sugar, cocoa, salt and baking soda in an 8-inch square pan.
Make three holes in the mixture. Put vinegar in one hole, oil in another, vanilla in the third.
Pour the cold water over all and stir to mix well. Bake at 350 degrees F for 35 minutes. Cool then frost.
Black Bottom /Cream Cheese Chocolate Chip Filling:
Ingredients
4 oz cream cheese
1/2 egg
1/6 Cup of Sugar (2 tablespoons plus 2 teaspoons)
pinch of salt (1/16 teaspoon)
1/2 cup mini chocolate chips
Directions
Mix all the ingredients together until it is light and fluffy – then add chocolate chips. Fill your cakepop maker 2/3 full with cake mix, next add a 1 tsp of the the cream cheese filling in the center. Bake according to your maker – you may need to bake a few minutes longer for the filling to bake through. Allow to cool. Dip your pops in chocolate, add some fun sprinkles, eat and enjoy!
