Only 3 Ingredients ~ Triple Chocolate Pumpkin Mini Muffins

I am so excited to share a SIMPLE yummy muffin recipe with you today! 
Triple Chocolate Pumpkin Mini Muffins, made with only 3 ingredients - cake mix, pumpkin and chocolate chips!  So simple to make, oh so good.


After seeing, Blueberry Angel Food Cake Dessert {Fluff Berry Cake} recipe shared over at The Frugal GirlsI thought about all the different ingredients you could use with cake mix. I thought, why not pumpkin. I LOVE pumpkin! 
I also happened to have a can in my pantry leftover from the holidays. After a quick Google search, there were several recipes out there with these two ingredients...so my idea wasn't so novel.   

These muffins did not disappoint!  Super moist and delicious! A lot healthier too! The big bonus for me, it's a great egg-free treat for my little one with an egg allergy. These muffins also do not have a strong pumpkin taste - I actually cannot taste the pumpkin. If you are not a fan a pumpkin like my husband, you may find you'll like these - my husband did, he loves them!

Triple Chocolate Pumpkin Mini Muffins

Ingredients
  • 1 Box of Betty Crocker Triple Chocolate cake mix OR any Devil's Food/Chocolate Cake Mix
  • 1 can 100 % Pure Pumpkin  (15 ounces) 
  • Mini or Regular Semi-Sweet Chocolate Chips for topping
Directions
Preheat oven to 325 degrees F. Lightly spray mini muffin pan with non-stick cooking spray. 

Pour cake mix in a large bowl and add a little bit of pumpkin at a time and mix. Once all the pumpkin is blended with the dry cake mix, use an electric mixer on medium speed for 2 minutes. Next, spoon mixture into mini muffins 3/4 full. Sprinkle tops with a few chocolate chips, place in oven on middle rack, bake for 15 mins or until toothpick comes clean. 

Makes approximately 30 mini muffins. Enjoy!

Hi Florence! Thank you so much and thanks for stopping by! I think they work great in a standard muffin pan. I would bake them according to the recipe on your cake mix box for standard size muffins. I would be sure to check them with a toothpick - also maybe check them a few minutes early to be sure they are not over-baking. I do the same thing but I use a box of spice cake mix! Can also make cookies out of this... just drop by tablespoon or so and bake at 350* for 10-12 mins. So good! My friend recently did a bake sale, and these were the first to sell out :)

If you like the pumpkin flavor, you can use a spice cake mix instead of the chocolate. Then they taste like pumpkin chocolate chip cookies. Divine!

Oh how I LOVE these! I make them with a spice cake mix too...they're going like 'hot cakes' at my baked goods stand at our local farmer's market. No one can guess they are lowfat. Amazing! Yours look mighty inviting!
