I thought I’d share it again for new followers.
This is the time of year our crock-pot gets a lot
of use. With heading back to school, homework
and evening activities, I’m always looking for
great recipes for the crock-pot!
I first saw this recipe,
Slow Cooker Cilantro Lime Chicken,
on Pip & Ebby. I didn’t have jalapenos,
so I used a can of diced green chiles.

Crock-Pot Green Chile Salsa Chicken Recipe:
2 to 3 lbs of boneless chicken breast or thighs (thawed) – If you have large chicken
breasts, cut in thirds.
1 24 oz jar of salsa (mild, medium or hot – do what you like)
1 4 oz can diced green chiles
1 packet of taco seasoning (1.25 oz)
1/4 cup fresh cilantro chopped
2 limes
*Optional – sour cream & cheddar cheese
Directions
Spray your crock-pot with non-stick cooking spray. Place chicken in single layer in pot. With a large bowl, mix salsa, green chilies, taco seasoning, cilantro and juice of 1 lime. Pour mixture over chicken and cook on high for 4 to 5 hours. Serve over rice.
*Sour cream, cheddar cheese, a little squeeze of fresh lime and fresh cilantro,
makes this great dish even better!

Thanks, Danni! I love using my crock-pot, especially in the fall. I just saw on Pinterest, you can make baked potatoes too! Just wrap them in foil, place them in the crock pot on low for 8 hours. You can stack them too, so you can get 6-8 potatoes in a 4 qt pot :O) I'll be making lots of sweet potatoes!
