Tried & True Tuesday ~ Spinach and Dill Cheese Spread/Dip

I hope everyone is off to a great week!

Before I share this week's recipe, I just want to say thank you so much for all the visits and sweet comments that are left.  I read every single message and value each one.  Lately, I have not been able to reply to all of you in a timely manner, sorry about that.  Remember my Tried & True Tuesday Post about our Stomach Bug Kit?  Well my little one didn't have a stomach bug and she has been sick on and off for almost a month now.  We hope to have her back to her healthy self soon.  Until then, please know I am reading your comments and love your feedback and support!  I am so thankful!

......................................................................................

Onto Tried & True Tuesday!

I have been wanting to make my own cream cheese spread for a while and finally did!  This is one of many recipes I have been thinking about.  There are more to come...stay tuned!

Today's spread has fresh spinach, dill, lemon juice, cream cheese, feta, garlic and onion...so good on your favorite crackers, breads, bagels and veggies! This would be wonderful on turkey or veggie sandwiches and wraps too!

Spinach & Dill Cheese Spread/Dip

Print Recipe
Ingredients
  • 6 oz bag of Fresh Baby Spinach
  • 8 oz cream cheese
  • 4 oz  Feta, crumbled
  • 2 Cloves Garlic, mined
  • 3 Green Onions, chopped
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Tablespoon Fresh Dill (more if you like)
  • 1 Tablespoon Fresh Lemon Juice
Directions
In a sauce pan, heat olive oil on medium heat, add garlic, green onion and spinach.  Cook, stirring spinach continuously for approximately 5 minutes until done - see picture below. Remove from pan, drain any excess liquid. Chop spinach and place in large mixing bowl.   Add remaining ingredients.  Mix until blended well.  Place in fridge and allow to chill for a few hours.  Enjoy with your favorite crackers, breads, bagels and veggies!

Thanks for stopping by!
Cheers!
