Happy National Coffee Day ~ 4 Easy, Yummy Coffee Recipes



Happy National Coffee Day!

If you follow my blog, you know how much I love coffee. 
 I think my heart is still in Anchorage, Alaska, where 
there is a coffee shop on almost every single corner!

To celebrate this fun day and my love of coffee,
I'm sharing 4 of my favorite coffee recipes:

Baileys & Kahlua Iced Coffee 

Ingredients
1 oz Baileys Irish Creme
1 oz Kahlua 
4 to 5 oz strong coffee (you can use flavored coffee, vanilla, hazelnut)


Directions
Fill glass with ice.  Fill 3/4 of the glass with coffee.  Next, add Baileys and Kahlua, stir. Top with whipped cream and sprinkle with cocoa powder.  Mmm, mmm, good!


Easy Iced Mocha Recipe

Ingredients
4 to 5 oz of Strong Coffee (flavored like vanilla is great)
Splash of Vanilla Creamer (fat free, sugar free or reg)
1 oz Milk (skim, 2% or whole)
Little Squeeze of Chocolate Syrup (Hershey's)
Whipped Cream
Cocoa Powder

Directions
Fill glass with ice, pour 3/4 of glass with coffee.  Add vanilla creamer, chocolate syrup and milk, stir.   Top with whipped cream and cocoa powder.  Enjoy! 


Coffee with Sweetened Condensed Milk = DELICIOUS 

Ingredients
Strong Coffee
Sweetened Condensed Milk

Directions
Mix a cup of strong coffee with 2-3 Tablespoons of sweetened condensed milk. That's it! Serve hot or cold. YUM!



Alaskan Sludge Recipe (my favorite)
Ingredients
1-2 Shots Espresso
Strong Coffee
Cream and Sugar *optional
Directions Add 1-2 shots of espresso to your cup of coffee.  Add cream and sugar if you like. This is my most favorite way to have coffee!  So.  Darn.  Good.

Bacon, Egg & Cheese Muffins On The Go...

Last night, while going through my news feed on Facebook, Food.com posted a picture of a Bacon and Egg Tart - click here to see the recipe.  I have come across similar recipes using a muffin tin on Pinterest.  This morning I woke up and decided to try it myself...

Bacon, Egg & Cheese Muffins Recipe 

Ingredients
Bread - I used classic white sandwich bread
Butter 
Large Eggs
Bacon
Shredded Cheddar Cheese
Non-Stick Cooking Spray
Salt & Pepper to taste
Toppings - have fun!

*For skinny version, use egg whites and butter alternative (I can't believe it's Not Butter Spray).  These muffins are small, so the portion is controlled.  You can use a light bread and tofu or turkey bacon.

*Tips
~For toppings,  use anything you like.  I used tomato and green onion for the skinny
 version.  

~I only have a standard size muffin tin and used one egg for two muffins.  I made one with egg yolk and whites and the other with just egg whites.   If you have a deeper/larger than standard muffin tin, you should be able to use one whole egg for each muffin.


Directions
Preheat oven to 350 degrees F.  Lightly spray your muffin tin with non-stick cooking spray.  Make circles with your bread.  I used my sandwich press and seal  ~ you can use a round 3 1/2 inch cookie cutter or just use a knife to cut away the crust. Brush one side of bread with butter.  Place the bread, butter facing down in a muffin tin.  Lightly press the bread to the bottom and sides forming the crust.  Next, crack an egg and fill your bread crust.  For a standard size muffin tin, one large egg will fill two muffins.  *You can scramble your eggs and then fill the muffins.  Last, top your eggs with cheese, bacon and anything else you like.  Place in oven on middle rack and bake for 15-20 minutes.  My muffins only took 15 minutes.  If you are using a larger muffin tin and a whole egg for each, cooking time may take longer, closer to 20 minutes.   Once done, remove from oven, salt & pepper to taste!  Enjoy!

There are no rule for this easy recipe.  Add whatever toppings you like.  You can even scramble the eggs before filling the bread crust.  You can make a few at a time or a dozen! I love the idea of making these ahead of time for an easy breakfast in the morning.  Just pop them in the microwave and go...

Tried & True Tuesday ~ Adorable DIY Fall Decor in Minutes

I don't have a recipe to share today, but I do have a great tip!  If you are new to Sweet Little Bluebird, you may have missed one of my favorite tricks for easy holiday decor.  I had a light bulb moment in Marshall's last December...you can read about that here and see what I made.  I have been doing the same trick for every single holiday since...

All you need:
Frame(s)
Matte (scarpbook paper, fabric)
Stickers
Scissors 


Voila!
Cute fall decor in less than 5 minutes!

I reuse my frames and just switch them our for each holiday.
I purchased my frames and stickers from Hobby Lobby, all on sale!



This little owl came in a set of 3 from Marshalls ~
