Strawberry Spinach Salad – Easy to make, loaded with Gorgonzola cheese, bacon, toasted pecans, cranberries, topped with a tasty balsamic dressing!
Ingredients
SALAD
- 5–6 cups fresh baby spinach
- 2 cups fresh strawberries, cut to bite size
- 5 ounces Gorgonzola cheese
- 8 strips bacon, cooked, chopped (applewood smoked bacon is great)
- ½ cup dried cranberries
- ½ cup pecans, toasted, chopped
Mary's Balsamic Dressing
- ½ cup vegetable oil or canola
- ⅓ cup granulated sugar
- 3 Tablespoons good quality balsamic vinegar
- ⅛ teaspoon dry mustard (or a little squeeze of yellow or Grey Poupon mustard)
- fresh cracked pepper to taste
Instructions
- Clean spinach, place in a large bowl and top with all the ingredients, then make the dressing.
Make the Dressing
- In a small bowl, whisk all the dressing ingredients, until sugar and oil blend. It may take a minute for the oil and sugar to blend. Keep whisking….it will blend.
- Top salad with desired amount of dressing, toss and enjoy.
Notes
Tips
- You can add more or less of each ingredient – do what you prefer.
- Top with grilled chicken breast – a favorite in our house!
- To toast pecans – place in skillet on medium high heat, stirring until lightly toasted.
- If you plan on serving the entire salad, go ahead and add the dressing a little at a time, blending until you reach the desired amount. If not, keep dressing separate and add individually.

Oh Mary this looks amazing! Yum!!!!
Mary
Thank, Nat! The dressing and all the flavors are a perfect combo. You could even add a bitter apple, like granny smith, for another layer of flavor. I love salads with tons of stuff….Can you tell?! 😉

Oh Mary! This looks so pretty as do all of your recipes. I am always watching out for some great summer salads because it gets too darn hot to cook here! This is a winner in my book and the salad dressing….yummmm! I'll be using that one on more than just this salad! Thank you!
Mary
Thank you! The dressing is killer, Danni. If anything, print out the dressing recipe…it is good on so many salads, and a great dipping sauce too!
