This week’s Tried & True is Ina Garten’s (Barefoot Contessa), Oven-Fried Chicken. This is a favorite of my brother-in-law’s. After having it, I can see why. So simple to make, so good.
My sister made this surprise dinner for her husband during my visit in Alaska. I love how simple it was to make. The recipe calls for marinating the chicken in buttermilk (my sister marinated it overnight), flouring, lightly frying the chicken in a pan until it just starts to turn a golden brown (just a few minutes on each side) – then popping the chicken in the oven to “fry” the rest of the way. 5 simple steps.
This is so much easier than standing over the stove waiting for chicken to cook all the way through. The outside of the chicken is super crispy and the inside is moist, tender, delicious – hot and ready! This is a great way to make fried chicken for a large family like my sisters. I give this recipe 5 stars!

Ina Garten’s Oven-Fried Chicken
Ingredients
- 2 whole chickens (3 pounds each), cut in 8 pieces
- 1 Quart Buttermilk
- 2 Cups All-Flour
- 1 Tablespoon Kosher Salt
- 1 Tablespoon Freshly Ground Black Pepper
- Oil (vegetable or canola) or Shortening
My sister likes to add onion powder. Add your favorite seasonings.

Kinda looks a bit less fatty than the usual grill or pan/deep fried chicken. Might give this a try and see it it’s as good.
