This evening’s dinner was a creative twist on a familiar favorite – I had a pound of ground beef with dinnertime possibilities, and my husband had a craving for chili. While I love a hearty chili in the winter, it wasn’t quite hitting the spot tonight. Then, inspiration struck – a can of biscuits in the fridge! Remembering the rave reviews for my Bubble Up Mexican Casserole, I knew a Bubble Up Chili Bake could be just the ticket. And let me tell you, it was a winner! Absolutely delicious and perfect for using up ground beef. This was the perfect comfort food for this cold snap here in Ohio.
WHAT YOU NEED TO MAKE BUBBLE UP CHILI BAKE
- 1 pound of lean ground beef
- 1.25 packet of chili seasoning
- 1 can diced tomatoes (14 1/2 ounces)
- 1 can kidney beans (15 to 16 ounces), do not drain
- 16 ounce can of refrigerated biscuits
- 2 cups shredded cheddar cheese
- favorite chili toppings (optional)

Bubble Up Chili Bake
Ingredients
- 1 pound lean ground beef
- 1 packet McCormick Original Chili Seasoning Mix (1.25 ounces) or your favorite chili seasoning mix
- 1 can diced tomatoes, do not drain (14 1/2 ounces)
- 1 can kidney beans, do not drain (15 to 16 oz, light or dark)
- 1 can refrigerator biscuits (16 ounce container)
- 2 cups shredded cheddar cheese (cheese is added after baking for 25 minutes)
Instructions
- Preheat oven to 350 degrees F. Spray a 9×13 baking dish with non-stick cooking spray.
- Cut biscuits into quarters and place them in a single layer in the baking dish.
- Brown beef in a large skillet on medium-high heat until thoroughly cooked. When ready, drain excess fat. Add chili seasoning packet, kidney beans and diced tomatoes to cooked beef, stir well and allow to cook an additional 5 minutes. When ready, pour chili evenly over biscuits.
- Bake on the middle rack of the oven for 25 minutes. After 25 minutes, use a toothpick to check to see if the biscuits are cooked through.
- Remove from oven, evenly top with cheese and place back in oven for an additional 8 to 10 minutes, until cheese has melted and begins to bubble. Serve with your favorite chili toppings like sour cream and onion. Enjoy!
- Please Note - Ovens vary, and cooking times may need to be adjusted – check your biscuits to make sure they are cooked thoroughly.

If you use cornbread mix, I would put the chili mixture on the bottom and put the cornbread mix on top. My mom used to make something similar and would do that. Probably common sense.

This was a simple, tasty weeknight meal. The only changes I made was to use a 9 x 9 pan and a small can of biscuits. It's just the 2 of us and the other half will be great for lunch leftovers. No problems at all with the biscuits being cooked. Thanks for posting! 🙂

For those of you having difficulty getting the biscuits fully cooked, what about cooking them slightly before covering with the meat mixture, say about 10 minutes or so? That might solve the problem.

just finished making and eating this…..I would probably use a small can of biscuits because we don't like quite so much bread but it was fine for a quick dinner

I made this today. The biscuits under the other ingredients did not bake properly. They were still too doughy, so I did not eat them. I had to throw them away. I will not make this again. You might as well make the chili separately and the biscuits separately.

Sorry to hear that. It's important to check the biscuits before removing from oven. I just added a comment at the bottom of the recipe stressing that. I have made this recipe several times, it's my oldest favorite dinner. I have made all sorts of bubble up recipes, all with the same amount of toppings (wet) . On one occasion, the biscuits were still doughy so I just popped it back in the oven to finish baking. Thanks for taking the time to leave a comment.

I always think of corn bread with chili rather than biscuits, just wondering of anyone has tried this with cornbread instead of the biscuits?

Pillsbury now sells Corn flavored refrigerator biscuits. I bet this would be a wonderful substitute!!

I have made this similar dish with corn bread from jiffy but it was on top of the chili instead of on the bottom like these biscuits. And it came out really good. My friend who has to have gluten free stuff loved the way this tasted.

We can buy biscuits in cans that are sold in refrigerator section. I would imagine you could just make homeade biscuits (uncooked)-it is a quick meal so she used canned biscuits for time saving.

Glad to hear that. I also live in Australia and was wondering if I could substitute for homemade. They do not sell canned biscuits or rolls here. I miss them so much. If she just makes some scones, very plain and not sweet that should work for her.
