    Today’s recipe is a quick and easy dip that only has 4 ingredients – Fiesta Ranch Dip, Sour Cream, Rotel, Shredded Cheddar Cheese!

    UPDATE April 23, 2014: Yesterday I adapted this recipe using a packet of Hidden Valley Ranch Original Salad Dressing and Seasoning Mix, along with an 11 oz. can of Mexicorn (variation recipe below)…it was awesome! If I had to choose between the two recipes, this new version would be my pick! My friends gobbled it up and asked for the recipe! Grab the recipe below.

    Fiesta Ranch Dip

    Ingredients

    • *1 packet Hidden Valley Fiesta Ranch Dip – (reduce amount for less intense flavor)
    • 10 ounce can Rotel Original (drain excess liquid)
    • 16 oz sour cream
    • 1 cup finely shredded cheddar cheese

    Directions
    Mix all ingredients in a medium size bowl. Chill in fridge for 1 hour.  Serve with your favorite tortilla chips.  Great with veggies too!  Enjoy!


    Tips for “jazzing” up the dip (grab recipe below):

    • Add a can of mexicorn or sweet corn (drained).  I LOVE this dip with corn added!
    • Top with finely shredded cheddar cheese, shredded lettuce, diced tomatoes and olives.

      This is a “go to” dip and so easy to make! I like to make it a day ahead so it thickens a little and the flavors can blend. So yummy. It also is a hit at work parties. I use the fiesta dip and add corn.

      This was a work classic! As I make this I find more stuff to add I use jalapenos to give it a big kick for the spicy lovers. I do about 4 of them finely diced, leave a little bit of the seeds in.

      I couldn’t find the fiesta seasoning so i used the original ranch seasoning and a little bit of taco seasoning! I also added canned roasted corn. It was soooo good! I have made it with the fiesta seasoning also but it was spicy and not as good.

      Can you make ahead of time? Also can I just use reg ranch dip, that is all i have.

      Make this often. Excellent!!! Can add black or green olives (chopped) and/or green onions. Fiesta Ranch flavor is a MUST….. if you don’t have it, don’t make it. Have also used cream cheese instead of sour cream to make it more of a spread.

        Has anyone tried it with the mexicorn and using the fiesta ranch packet because i only read she replaced it with original ranch packet. I wonder how its taste with the corn and the fiesta ranch

          I make it with Rotel, Mexicorn, and the Hidden Valley Fiesta Ranch packet. It’s soooooo good! People request that I bring it to parties. I have to get the Fiesta Ranch on Amazon because my stores don’t carry it.
