Fiesta Ranch Dip

Today's recipe is a quick and easy dip that only has 4 ingredients!   
Perfect for the big game this Sunday!  FIESTA RANCH DIP!  Always a hit!

Update, April 23, 2014:  Yesterday I adapted this recipe using a packet of Hidden Valley Ranch Original Salad Dressing and Seasoning Mix, along with a can of Mexicorn (variation recipe below)...it was awesome!  If I had to choose between the two recipes, this new version would be my pick!  My friends gobbled it up and asked for the recipe!


Fiesta Ranch Dip

Ingredients
  • *1 packet Hidden Valley Fiesta Ranch Dip - (reduce amount for less intense flavor - you can use )  
  • 10 ounce can Rotel Original (drain excess liquid)
  • 16 oz sour cream
  • 1 cup finely shredded cheddar cheese
Directions
Mix all ingredients in a medium size bowl.  Chill in fridge for 1 hour.  Serve with your favorite tortilla chips.  Great with veggies too!  Enjoy!

Tips for "jazzing" up the dip:
  • Add a can of mexicorn or sweet corn (drained).  I LOVE this dip with corn added!
  • Top with finely shredded cheddar cheese, shredded lettuce, diced tomatoes and olives.
*New variation:

  6. You can swap the sour cream for 0% Greek yogurt to make it healthier. You can't tell a difference!
