    Perfect Roasted Butternut Squash

    Today I am sharing my go-to recipe for butternut squash – Perfect Roasted Butternut Squash!

    PERFECT ROASTED BUTTERNUT SQUASH

    Just a few ingredients to make this absolutely delicious side dish that compliments so many meals – butternut squash, olive oil, garlic, salt and pepper. These simple ingredients allow the butternut squash to really shine. Simple never tasted so good.

    WHAT YOU NEED TO MAKE PERFECT ROASTED BUTTERNUT SQUASH


    One butternut squash (about 3 pounds), garlic, olive oil, salt and pepper.

    HOW TO MAKE PERFECT ROASTED BUTTERNUT SQUASH

    To make – peel and seed squash then cut into 1 inch bite size pieces.

     

    Place cut butternut squash in a large bowl, drizzle with extra virgin olive oil, sprinkle with minced garlic and season with salt and pepper. Mix well. Pour squash in a single layer on baking sheet or roaster. Place on middle rack of oven and roast for 25 to 30 minutes, turning them once half way through roasting. Squash is ready when it’s tender and lightly browned.

    For a great step-by-step tutorial on how to peel, seed and cut a butternut squash, head to SimplyRecipes.com. *Great trick I learned to make the peeling and cutting process a little easier – pierce the squash a few times with a knife or fork and pop it in the microwave for 3-4 minutes. Allow to cool, then peel, seed and cute into pieces.

    Ingredients
    • 1 butternut squash (approximately 3 pounds), peeled, seeded and cut into 1 inch bite size pieces
    • 2 cloves garlic, minced
    • 2 tablespoons extra virgin olive oil
    • salt and pepper to taste

    Directions

    Preheat oven to 400 degrees F.

     

    Place cut butternut squash in a large bowl, drizzle with olive oil, add minced garlic, salt and pepper and mix well, making sure to coat each piece. Pour squash in roasting pan or baking sheet in a single layer.

     

    Place on middle rack of oven and roast for 25 to 30 minutes, turning one time halfway through roasting -roast until tender and squash is lightly browned. Enjoy!

      try putting on olive oil (about 2 T), 4 T maple syrup a bit of salt and lots of cinnamon. Mix with your hands, put on baking sheet, c
      over and bake 20 minutes, remove foil and pour a bit more maple syrup over them and bake an addition 20-30 minutes or till a bit crisp.
