Easy Slow Cooker Chicken Stroganoff

Today's recipe is a wonderful slow cooker meal the whole family will love including the kiddos - Easy Slow Cooker Chicken Stroganoff!

Just a few ingredients and minutes to throw together, this fantastic slow cooker recipe is one you'll want to add to your recipe box, sure to be on regular rotation. Crowd pleasing comfort food that's perfect for a busy day and will have them coming back for more! Also makes delicious leftovers.



I was given this recipe years ago by a friend but it can also be found on Allrecipes.com. Head there, where it has a 4 1/2 star rating and hundreds of rave reviews. Also be sure to check out the comments section for tips on how others adapted the recipe for diet and taste.  

What you need: 4 boneless skinless chicken breasts cut into bite size pieces/cubed, 3 tablespoons of melted butter, 1 packet of dry Italian salad dressing mix, 1 can of condensed cream of chicken soup (or make homemade, see link below), 8 ounces of cream cheese and a bag of egg noodles (or serve over rice).




To make: Spray slow cooker with non-stick cooking spray. Place cubed chicken in an even layer in cooker. In a small bowl, melt butter then add dry Italian dressing and mix well. Pour over chicken, stir, coating chicken. Cover and cook on low for 5 to 6 hours. 



Last, add cream of chicken soup and cream cheese and mix, turn cooker on high and cook an additional 30 minutes until heated through.  



Serve over egg noodles or rice. Perfect with steamed green veggies and a dinner salad. Enjoy!

Ingredients
  • 4 boneless skinless chicken breasts, cut into bite site pieces/cubes 
  • 2 tablespoons butter, melted
  • 1 packet (7 ounces) dry Italian salad dressing mix
  • 8 ounces cream cheese
  • 1 (10.75 ounces) condensed cream of chicken soup or make homemade using equivalent amount
  • extra wide egg noodles (12 ounce bag), prepared according to package - or serve over rice
Directions
Spray slow cooker with non-stick cooking spray. Place cubed chicken in an even layer in cooker. In a small bowl, melt butter then add dry Italian dressing and mix well. Pour over chicken, stir, coating chicken. Cover and cook on low for 5 to 6 hours. Last, add cream of chicken soup and cream cheese and mix, turn cooker on high and cook an additional 30 minutes until heated through.  

Prepare egg noodles (or rice) according package.

Serve over egg noodles or rice. Perfect with steamed green veggies and a dinner salad. Enjoy! 

Tip
Over the years I have often subbed condensed cream of mushroom soup for cream of chicken and both are great. I also serve this over rice for my daughter with an egg allergy...but I think egg noodles taste best.

I was hungry and just got off work so I made it on the stovetop instead. I have a ton of cream of chicken from Sam's Club so I'll always be ready for tasty recipes like this! Also forgot I didn't have Italian dressing... I just dumped garlic and onion and Italian seasoning... Hope it works. I'll try it again next time I get the dry Italian mix.
