This was one of my roommate Kim’s favorites back in college. I grew up with my Grandma’s Cottage Cheese Salad, that is loaded with veggies, so this was new to me. From the first bite I was hooked. Not only is this a cinch to make, it’s darn good too. Bonus, it’s budget friendly and a healthy, satisfying meal for penny pinching college students.
To make, simply top cottage cheese with your favorite fruit – you can use fresh or canned. Top with strawberries, peaches, pineapple, pear, blueberries, cantaloupe, kiwi and more. Fruit cocktail is my favorite, followed by peaches.
Twenty plus years later, I am still enjoying this light and refreshing salad. Moving to Georgia, this will be on regular rotation during the hot summer days.

Ingredients
- cottage cheese – regular or reduced fat
- favorite fruit, canned or fresh – strawberries, peaches, pineapple, pear, blueberries, cantaloupe, kiwi and more
