I am having so much fun reading all the memories people are sharing about growing up with tomato sandwiches after my tomato sandwich post on Wednesday, Summer’s Favorite Sandwich. This afternoon, when I was making a fried egg sandwich for lunch, I thought it would be another fun post for people to share their favorite ways to make this old school favorite.
*Note to my southern Duke’s Mayonnaise friends (because I know I’m going to get grief for having Hellmann’s in the photo above)…yes, yes, yes, I know how awesome ya’ll think Duke’s mayo is, that NOTHING compares (mayo wars)…I still prefer my Hellmann’s. Sorry, not sorry. Haha! But please feel free to remind me.
I grew up with fried egg sandwiches, another childhood staple and favorite. Growing up, our fried egg sandwiches were simple – toasted white bread with Hellmann’s or Miracle Whip, an egg or two fried in butter, with salt and pepper. I like my eggs well done (over hard). Simple to make, so good. In the summer, fresh sliced garden tomatoes are a must and if I want some crunch, I’ll add some lettuce too.

My grandparents loved to poach their eggs over easy and have them over buttered toast (using fleishman margarine) with salt and pepper – an open face egg sandwich and a little healthier (Poached Egg on Toast Recipe).

High times are an egg sandwich with bacon. No mayo needed if you cook the egg over easy or medium. Bacon makes it extra special!

Has anyone ever used Marzettis slaw dressing in place of Mayo on sandwiches?!! Delicious!!!!

I didn’t grow up eating egg sandwiches 🥪. I didn’t try it until I married my husband ( northerner). He asked me to make him one and was like what is that?! So he showed me how to make it but with mustard. No mayo here. I also worked at IHOP and one of the cooks made me a fried egg sandwich 🥪 and it was delicious 😋! He had onions tomatoes and lettuce in it! 😋

I cannot even fathom eating some of these sandwiches. The combination of ingredients sound horrible. Our egg sandwiches consisted of just that-an egg on buttered toast or bread. Scramble the egg add salt and pepper and fry it. You don’t need to add any of that other stuff. I do however like a slice of cheese on it if it’s on toast. Everyone has different likings so I hope all enjoy eating things they like. After all we can’t all like the same things. Happy eating.

We used buttered toast, sliced tomatoes and crispy bacon. Some put Lettuce on theirs,I don’t like salad on my sandwiches. We call them “Dinny Mores”. I still love them.

I always loved/love Hellman’s yes being a northeasterner, but i now live below the the Mason/Dixon line and I’ll gladly use Dukes if that’s all that’s available !

I also grew up eating fried egg sandwiches & I love them. I’ve eaten tomato sandwiches but usually add thin slices of onion or cucumber or both!! Hellmans Mayo for sure!

Just like this is awesomeness, and sometimes, if I'm being extremely decadent ! I add bacon or sausage and a fried or oven baked hash brown patty as well. Soooo yummy. Oh and a slice of melted cheese. Delish. Agree On the Hellmans….no other for me!

i would take a slice of baloney,fold it in half & take a bite out of the middle. then fry egg & put the baloney over the yolk,add a slice of velveta cheese, toast & have my version of egg Mcmuffin. way before McDonalds

I always put a fried egg on a BLT. So good

Heat a non-stick fry pan with half tsp. butter. Drop in an egg, salt and pepper and take a toothpick and break the yolk and spread around, then turn over finish cooking. This is done over low heat as eggs get tough from to high heat. Place on whole wheat toast. Enjoy!

My husband and I both love a fried egg sandwich, sometimes with bacon or sausage-hold the Mayo. My brothers always put ketchup on theirs but salt and pepper work for me. We like our bread toasted with butter, sometimes I cook the egg in the microwave and other times in the skillet, always delicious.

Hi Mary! Thanks for the great post! This may sound a little strange, but I toast a couple of slices of organic whole grain bread, smear on some butter, spread a couple of tablespoons of strawberry jam over that, place an easy over egg on each slice, break the yolk so it soaks into the bread and top it off with a sprinkle of season salt and pepper. Amazing! In fact, I'm about due one right now….

Then add cheese and a tomato. You could keep going to make a Dagwood Bumsted sandwich which is something I grew up with. Does anybody remember those. I love these items you are coming up with. Takes me back a long time. In the summer in Ohio we ate these with home grown tomatoes.

Never had them toasted… We just had them on plain bread buttered, with a piece of cheese..would have better toasted so the steam and heat from the eggs didn't make the bread soft.
