I finally made an Avocado Egg Salad! I used all the same ingredients as my Cilantro Lemon-Lime Egg Salad — I just doubled the recipe and added an avocado.
This salad is great! I love the addition of avocado!

Avocado Cilantro Egg Salad with Lemon-Lime Mayo
Print Recipe
Ingredients
- 12 large hard-boiled eggs, chopped (6 whole eggs and 6 egg whites only)
- 1 avocado (1/2 diced, the other half mashed)
- 1/4 cup fresh cilantro, chopped
- 2 Tablespoons red onion, chopped
- 2 Tablespoons green onion, chopped
- 2 Tablespoons mayo (light or regular – not Miracle Whip)
- 2 teaspoons lime juice
- 2 teaspoons lemon juice
- Fresh cracked pepper, to taste
- Salt, to taste (I used sea salt)
Directions
For the lemon-lime mayo, in a small bowl, mash 1/2 of the avocado. Next, add the mayonnaise, lemon juice, and lime juice. Mix until smooth. Set aside.
In a medium-sized bowl, add the chopped eggs, diced avocado, onions, and cilantro. Add the lemon-lime mayonnaise and gently fold/mix everything together. Salt and pepper to taste. Chill in the fridge. Serve over a bed of lettuce, with crackers, or make a sandwich.

I had all the ingredients to find your recipe and so glad I did. My husband loves all things avocado, so that was the easy part. Convincing him it belongs in and egg salad took some pushing but now he is asking for seconds! What a nice light, refreshing summer sandwich! We enjoyed a change to the standard deviled style I usually make. Thank you! 🥪
