We had a get-together at our home over Labor Day weekend and my friend brought the best salsa! It was so good, I grabbed a small bowl, snatched the salsa and spooned a bunch into the bowl. I ran outside with my cell phone to take a quick picture with the “good light” that was left. I know I looked like a crazy person. I told them to check out my blog, I’d be posting her salsa dish next week!
I know, I know…the picture I took is really, REALLY bad.
But this recipe is really, REALLY good!
Who cares about picture quality…
Black Bean, Corn & Avocado Salsa:
Ingredients
2 Ripe Avocados (peeled, pitted and diced)
1 Can Black Beans (rinsed and drained)
1 Can Corn (drained)
3-4 Scallions (thinly cut)
Dressing Ingredients (mix together)
2 Tablespoons Red Wine Vinegar
4 Tablespoons Olive Oil
1/3 Cup Lime Juice
1/3 Cup Cilantro (chopped)
2 Cloves Garlic (mined)
3/4 teaspoon Salt
1/8 teaspoon Sugar
1/2 teaspoon pepper
Directions
Prepare dressing and the rest of the ingredients – mix everything together. Serve with any kind of tortilla chip! Enjoy!
