Beef Stew with Butternut Squash
Ingredients
- 2 teaspoons olive oil
- 1 pound stew beef (round or chuck) cut in chunks
- 1 large onion, chopped
- 1 tablespoon fresh ginger, peeled, minced
- 1 pound butternut squash (shortcut tip, buy it pre-cut in the produce section)
- 2 cloves garlic, minced
- 14 1/2 ounce can diced tomatoes (no salt)
- 8 oz can tomato sauce (no salt)
- 1 1/2 cups low sodium beef broth
- 1 1/2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon crushed red pepper flakes
- 3 cups cooked whole wheat couscous
- 1/4 cup sliced toasted almonds, toasted
- 1 tablespoon fresh parsley, chopped (*I rarely have this on hand – the stew is still delish)
