While in Alaska, I made my sister, brother-in-law and nephews one of my favorite easy dinners for a busy weekday –3 Ingredient Crock Pot Shredded Beef Tacos (awesome), along with a side of this Cilantro Lime Rice. The dinner was a big hit and the boys absolutely loved the rice.

Cilantro Lime Basmati Rice
Ingredients
- Basmati rice
- lime(s)
- lemon or lemon juice
- salt
- fresh cilantro
- oil/butter (optional)
Using the instructions on the back of the bag of basmati rice, choose the amount of rice you wish to make. If the rice you are using requires you to rinse it first, don’t skip that step. Follow the instructions for the amount of water, oil/butter and add the following below. If you have water options in the directions, opt for less water:
For every 1 cup of uncooked rice, add the following to the water and cook according to the directions on bag:
- juice of 1 lime (fresh is best), approximately 2 tablespoons
- 1 teaspoon lemon juice
- 1 teaspoon salt
When rice is ready, fluff with fork and add 1 tablespoon of freshly chopped cilantro for every 1 cup of uncooked rice. Add more cilantro if you like.
Serve warm, but this is also good at room temperature.
This rice recipe can be made in a rice cooker. Follow the same directions, adding the cilantro after the rice is finished cooking.
