WHAT YOU NEED TO MAKE FIESTA PARTY DIP
Just five ingredients are needed to make this awesome dip – Rotel, Mexicorn, sour cream, shredded cheese (Mexican blend or cheddar) and Hidden Valley Ranch seasoning mix.
HOW TO MAKE FIESTA PARTY DIP
Pour everything in a medium size bowl (drain the excess liquid from the mexicorn and Rotel), mix and chill in the fridge for an hour our two before serving. Serve with your favorite tortilla chips, pita chips or Frito scoops.
This is my daughter’s go-to recipe at school when she and her friends have get-togethers. It’s a cinch to make, fits a college student’s budget and goes a long way.
Be prepared to refill the bowl! If you plan on making this for a large crowd, you may want to double the recipe.

Fiesta Party Dip
- 1 packet (1 ounce) Hidden Valley Ranch Original Salad Dressing and Seasoning Mix or make your own ranch mix – Stephie Cook’s Homemade Ranch Dressing Mix **For extra kick, use Hidden Valley Ranch Fiesta Ranch Seasoning Mix.**
- 16 ounces sour cream
- 10 ounces can Rotel Original (drain excess liquid)
- 11 ounce can of Mexicorn (drain excess liquid)
- 3/4 to 1 cup finely shredded Mexican four cheese blend (you can use just cheddar)
Directions
Pour all the ingredients in a medium size bowl and mix well (be sure to drain excess liquid from the corn and Rotel). Cover and chill in fridge for 1-2 hours. Serve with your favorite tortilla chips, pita chips or Frito Scoops.

I made this last week because I had a friend in from out of town and my kids were coming over. My husband said I bet that would be good hot and so he put some in a bowl and heated it up in the microwave. It was absolutely amazing! It took this delicious dip to a whole new level.

It makes a good amount. This is more than enough for a party, if there are other appetizers being served. I make this for small and large gatherings. Perfect amount for 8 people. Again, if more appetizers are being served, you should be good.

Ranch Dip now comes in Fiesta Ranch Dip mix. It is much better than Rotel.
